Simply mix the chopped tomatoes, olives, basil, and cream cheese in a bowl until blended well. Add a layer of the mixture over the face of a tortilla and roll it up. Once you cut it into smaller pieces, you’ll have your vegan pinwheels.
To make this easy vegan potato salad, start by cutting your potatoes into the size you prefer. Add them to a pot and boil them for 5-10 minutes. Once these are done, let them cool by rinsing the potatoes in cool water.
