With COVID-19 forcing most of us to spend more time away from work, the good news is we finally have time to follow through on all our favorite vegan picnic ideas. They’re perfect for breakfast, lunch, or dinner, and can be enjoyed by yourself or with the family.

Vegan Picnic Ideas You’ll Fall in Love With

In addition to having a location, blanket, and picnic basket, the food is the most important part of a picnic. It’s what brings everyone together and adds to the refreshing nature of eating a healthy meal outside.

Below, we’ll discuss two of our favorite vegan picnic appetizers, one of our favorite vegan entrees, and a vegan dessert to top your picnic off.

1.   Vegan Pinwheels

All you need are five ingredients, but you can truly use whatever ingredients you prefer most. For this recipe, we’ll use flour tortillas, sun-dried tomatoes, black olives, basil leaves, and vegan cream cheese.

Simply mix the chopped tomatoes, olives, basil, and cream cheese in a bowl until blended well. Add a layer of the mixture over the face of a tortilla and roll it up. Once you cut it into smaller pieces, you’ll have your vegan pinwheels.

2.   Vegan Potato Salad

To make this easy vegan potato salad, start by cutting your potatoes into the size you prefer. Add them to a pot and boil them for 5-10 minutes. Once these are done, let them cool by rinsing the potatoes in cool water.

Now, you need your dressing. Mix mayonnaise, pickles, vinegar, mustard, celery seed, dill, salt, and pepper in a large bowl. Eventually, add the potatoes and red onion until mixed well. You can sprinkle with paprika, or whatever you spice you prefer.

3.   Vegan Mashed Chickpea Salad Sandwich

Here’s a sandwich you’ll adore and definitely use for future picnic dinner ideas! To begin the process of making it, you’ll need a large bowl to mix everything in. You’ll need a can of chickpeas, both rinsed and cooled. Mash about 75% of them and add to the bowl.

Next, add your toppings. We like to use celery, scallions, and carrots. Mix in the vegan mayo (water and hummus), dijon mustard, garlic powder, salt, and pepper. Continue mixing while adding paprika and lemon to taste. All you need to do now is place it between two buns or pieces of bread!

4.   Vegan Peanut Butter Cookies

Who doesn’t love a delicious vegan peanut butter cookie? They’re the best way to end a meal! For this recipe, you’ll need to preheat the oven to 325 degrees. Add peanut butter, vanilla, maple syrup, apple sauce, and flour to a bowl and mix well.

Once combined, roll the batter into small balls and place on a baking sheet about 2 inches apart from one another. Bake for about 15 minutes or until cooked to your liking, and then repeat until the batter is gone.
