Delicious Spicy Cajun Shrimp Pasta

Ingredients:

  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions:

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the diced onion and bell pepper. Sauté until they begin to soften, about 3-4 minutes. Add the minced garlic and Cajun seasoning and cook for an additional 1-2 minutes.
  4. Reduce the heat to low and add the heavy cream and chicken broth to the skillet. Stir well to combine. Cook for 2-3 minutes, until the sauce has slightly thickened.
  5. Add the cooked fettuccine pasta to the skillet and toss to coat in the sauce.
  6. Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce.
  7. Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the top. Stir until the cheese is melted and fully incorporated into the sauce.
  8. Garnish with fresh parsley and serve immediately.
