Strawberry Shortcake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 pound strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold and cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the whole milk and vanilla extract. Pour the milk mixture into the dry ingredients and stir until just combined.
  5. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
  6. Using a round biscuit cutter, cut out shortcakes from the dough and place them onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool on a wire rack.
  8. In a medium bowl, combine the sliced strawberries and granulated sugar. Toss to coat the strawberries in the sugar and let sit for 10 minutes.
  9. In a separate mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Split the shortcakes in half and spoon some of the strawberry mixture onto the bottom halves. Top with a dollop of whipped cream and then place the top halves of the shortcakes on top.
  11. Serve immediately and enjoy!
