  • 2 pounds of ripe tomatoes

  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 cup of vegetable broth
  • 1/4 cup of heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the tomatoes in half, remove the seeds, and place them on a baking sheet.
  2. Drizzle the tomatoes with olive oil and sprinkle them with sugar, dried basil, dried oregano, salt, and pepper.
  3. Roast the tomatoes in the oven for about 25-30 minutes or until they are soft and slightly charred.
  4. In a large saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté them until they are soft and golden.
  5. Add the roasted tomatoes to the saucepan and stir them well. Cook them for about 5 minutes.
  6. Pour the vegetable broth into the saucepan and bring to a boil. Reduce the heat and simmer for about 15 minutes.
  7. Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a countertop blender and blend it in batches.
  8. Return the soup to the saucepan and stir in the heavy cream. Cook for an additional 2-3 minutes.
  9. Season with salt and pepper to taste. Serve the soup hot with a sprinkle of fresh basil or croutons, if desired.
